Long entrusted to the pig in France, the search for truffles today relies almost exclusively on the dog, which is easier to handle, more enduring, and above all less tempted to devour the precious harvest before its handler can intervene.
Why the dog dethroned the pig
The truffle pig, though gifted with an exceptional sense of smell, has a major drawback: its own appetite for the truffle seriously complicates the harvest. The dog, trained to signal without eating, has gradually established itself as the truffle grower's go-to helper.
The principle behind the training
Training a truffle dog rests entirely on positive reinforcement, as with the other detection disciplines covered in our previous articles: the dog associates the specific scent of the truffle with a reward (play or a treat), and is never encouraged to eat the truffle itself.
Training generally starts at a very young age, with progressive exercises linking the truffle scent to objects or food, before moving on to real conditions in the field.
Preferred breeds
Unlike other detection disciplines dominated by a few specific breeds, truffle hunting remains open to great diversity: the Lagotto Romagnolo (an Italian breed historically developed for this task), the Brittany Spaniel, the Braque, and many motivated mixed breeds with a good sense of smell.
Meticulous fieldwork
Contrary to a sometimes romanticized image, truffle hunting demands methodical work over extensive areas, often in less than favorable weather conditions (autumn, winter), with a dog that must maintain its scent concentration over hours of searching.
A booming economic activity
Faced with the scarcity of wild truffles and the growth of truffle cultivation, demand for properly trained truffle dogs keeps rising, driven by an economic sector where detection accuracy represents a direct financial stake for producers.
